This potato side is very tasty and gets eaten very quickly.
Prep Time: 30 minutes
Cook Time: 15 minutes
Total Time: 45 minutes
Ingredients:
- 6 Yukon Gold potatoes; large, peeled and boiled
- 2 tablespoons Butter
- 1/2 cup Milk; I used 2%
- 4 oz Cream cheese; cubed
- Chives to taste; snipped into small pieces
Preparation:
Hand mash potatoes, butter, milk and chives together(save some chives for topping). While you want to mix in the butter and milk, it’s better if the potatoes are not mashed smoothly. Transfer the potatoes into a baking dish. Place cubes of cream and sprinkle the remaining chives on top. Bake at 300 degrees F for 15 minutes. Smooth the cheese into the potatoes, but do not mix together. Make a big deal out of stirring them at the dinner table right before taking the first serving.
